WHere is a simplified version of a beverage from the seasonal drinks list. Designed as a party-sized premix that's bursting with the flavours of the festive period, making it excellent for hosting a festive gathering. Save the extra cordial for brunch beverages, puddings, or to mix additional servings of the drink.

Ingredients for the Citrus Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Premix (yields 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Instructions
Making the Citrus Syrup: Place every ingredients inside a pan, heat until it reaches a light boil, stirring so the sugar melts. After that, take off the stove and let it to cool down fully. Pour into an sterilised bottle, seal keeping it in the fridge, it can be stored for up to four weeks.
For the Batch Mix: Mix all the spirits and syrup into a sizeable container, leave to sit for an hour, then strain preferably using cheesecloth, to ensure it's perfectly clear.
For serving: Measure 85ml of the batch mix to a cocktail shaker containing ice, and stir carefully for about 60 seconds to cool it down. Filter into a cold coupe glass or equivalent, decorate with some cranberries and complete it with a light spray of the essential oil over the drink.
